Ingredients 

  • 4 large eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 medium onion, thinly sliced
  • 1 green chili, sliced (optional)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt, to taste.
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

1 Boil the Eggs:

  • Put the eggs in a saucepan and add enough water to cover them. After bringing the water to a boil, lower the heat, and simmer it for ten minutes or so.After taking the eggs out of the boiling water, peel them and let them cool under running water. Cut the hard-boiled eggs in half along the length.Get the pan ready:In a nonstick pan, heat two teaspoons of vegetable oil over medium heat. Crackle in the mustard seeds after adding them.

2 Prepare the Pan:

3 Sauté the Onions and Spices:

  • Add the sliced onions to the pan and sauté until they turn golden brown. Add the green chili if using, and stir for a minute.

  • Add turmeric powder, red chili powder, and garam masala to the onions. Stir well to coat the onions with the spices.

5 Fry the Eggs:

  • Place the boiled eggs in the pan cut side down. Fry them until the edges begin to crisp, about 2 to 3 minutes. Gently flip them over and cook for a minute more on the other side.

6 Season and Serve:

  • Make sure the eggs are thoroughly coated with the spices and onions by adding salt to taste and gently combining everything.
  • Add some freshly cut coriander leaves as a garnish, then serve hot. To add even more acidity, you can squeeze in some lemon juice.
